Mediterranean Sweet Potato Power Bowl - A Quick & Easy Nutritious Recipe

Ingredients:

Seves 2 but feel free to play around with quantities, you can't go wrong with this.


  • 2 medium sweet potatoes, diced (1 per person)

  • 2tsp Greek herbs (oregano, thyme, basil)

  • 2 tbsp olive oil

  • 1/2 cup crumbled feta cheese

  • 1/4 cup toasted pumpkin seeds

  • 2 handfuls of baby chard (or greens of choice)

  • 1 ripe avocado, sliced

  • Baby tomatoes, halved

  • Baby cucumbers, sliced


Instructions:


  1. Fry the Sweet Potatoes: Heat olive oil in a large pan over medium heat. Add diced sweet potatoes and Greek herbs. Cook until golden and tender, about 10-15 minutes.

  2. Prepare the Salad: While the sweet potatoes are cooking, combine baby chard, avocado, baby tomatoes, baby cucumbers, and red onion in a bowl.

  3. Assemble the Bowl: Once the sweet potatoes are ready, layer them on top of the salad mixture.

  4. Add Toppings: Sprinkle crumbled feta cheese and toasted pumpkin seeds over the top.

  5. Serve and Enjoy: Serve immediately! Oh, drizzle over some balsamic dressing or olive oil, and enjoy your Mediterranean Sweet Potato Power Bowl!
